Madre Ensamble Joven Mezcal is crafted from a thoughtfully blended ensemble of wild and semi-wild agave varieties—typically including Espadín, Madrecuishe, Tobalá, or other native species—harvested from the high-altitude regions of Oaxaca. These agaves are slow-roasted in traditional underground pits, crushed using a tahona stone wheel, naturally fermented with native yeasts, and double-distilled in copper stills.
